The story of our collaboration
For this limited release, we wanted to collaborate with a local brewery to create a unique flavour profile for our whiskey. We reached out to our friends at Whitewater Brewery in Castelwellen, Co. Down, and sent them a parcel of ex-bourbon casks to experiment with. Bernard Slone and his team at Whitewater Brewery were excited to take on the challenge of aging their Imperial Stout in our casks. They filled the casks with the Imperial Stout and left it to age for six months, allowing the beer to absorb the flavors and aromas from the bourbon cask that had previously aged our whiskey. After the six months were up, Whitewater Brewery returned the casks to us, where our distillers then added our Small Batch whiskey back into the casks for a further 11 months of maturation. This allowed our whiskey to absorb the unique flavor profile of Whitewater's Imperial Stout, adding an extra layer of complexity and depth to our whiskey. The final product is a smooth and flavourful whiskey with notes of dark chocolate, coffee (including espresso and caramel), and a subtle sweetness from the bourbon. We're thrilled with the success of this collaboration, and we're proud to offer a whiskey that has picked up the unique characteristics of a beer thanks to our partnership with Whitewater Brewery.
